I've been thinking about making some healthy muffins with multi grain flour to test if my daughter would like it. So, I tried this recipe below and it turned out really nice and she loved it. Best of all, I consider it healthy. Now, I add butter in my cooking at moderate levels and I dont consider that very unhealthy. I'm a strong believer of using what nature provides, in limited quantities as compared to splurging on so called healthy processed foods. For eg., I consider 1/2 cup of whole milk to be healthier than 1 cup of 2% milk. I would rather have 1/2 cup of whole milk than 1 cup of 2% milk.
Once my daughter found out that Cereal is heavily processed and is loaded with sugars. From that time, she refused to eat cereal for breakfast. She seemed to like the storebought "Aachi" health mix / saththumaavu kanji. So, I asked my mother to send me saththu maavu so I could give her kanji for breakfast. My mom sent her custom made saththu maavu with carefully selected ingredients so my daughter can have "kanji" for breakfast. She did not like the kanji made with that though. So, this flour was sitting in my refrigerator for a few months and I decided to experiment with it. I also had some canned pineapple chunks and the juice in it left over from another recipe so I used that as well. Now, I dont consider canned pineapple healthy, but I had to get it for a quick fix. Next time, I will try with some fresh pineapples or other fruits and I encourage you to try it too.
Ingredients:
1 stick butter
1 cup brown sugar (you can substitute honey too)
1.75 cups multi grain flour or saththu maavu (I used homemade saththu maavu)
.5 cup all purpose flour or whole wheat flour (I used all purpose flour)
1/2 cup cut pineapples sliced into small pieces
1/2 cup strained pineapple juice
2 tsp baking powder
1 tsp baking soda
Melt the butter, add the brown sugar and beat for 3-4 minutes on high speed mixer. Once it is light and fluffy, add the cut pineapples and pine apple juice and mix well.
Mix the flours, baking soda and baking powder together, gently sieve and fold into the wet mixture.
Adjust the amount of pineapple juice as required. You should be able to spoon the mixture into the muffin pan.
Spoon into lined muffin pans and bake at 365 degrees Fahreheit for 15-25 minutes, depending upon your oven and muffin pan size until a toothpick inserted into the middle comes out clean.
Allow to cool for 10 minutes before offering to Krishna.
The muffins were very moist and very soft.
I have the same home made kanji maavu and thought of trying it many times. But thats the best idea Vidya. I ll try it with a different fruit or flavor too. Thanks for posting these cookies tips.
