Carrot - Bell Pepper Spicy Soup


Ingredients:

Carrots (all colors) - 6, washed and chopped in blocks
Red peppers - 2, washed and chopped
Dash of cream
Sambar powder or other spice powder - 1 tbsp
Salt
Dash of butter

In a pressure cooker, add sufficient water, sambar powder, the chopped carrots and red peppers and cook for three whistles.

Once the steam is out, open the cooker, add some salt, 1 tbsp of cream and using a hand blender blend all ingredients completely. If you do not have a hand blender, you can just grind in a mixie in small batches.

Add some water to get to desired consistency. Bring to a boil.

If you do not want to add cream, you can add some coconut milk or soak and grind some cashews or almonds and add that while the soup is boiling.

Add a tbsp of butter (optional).

Offer to Krishna and enjoy.

Star Wars Cake Decoration

Eggless Star Wars Layered Cake

I made a two layer Star Wars themed cake this time. 
The bottom layer was Eggless Carob Cake and the top layer was Eggless basic cake. 

Carob Cake Recipe:
1.5 cups all purpose flour
1/3 cup carob powder
1 tbsp baking powder
1 tsp baking soda

1/2 stick butter
3/4 cups sugar
1/2 cup oil

Mix the butter sugar and oil in a large bowl and beat using a hand mixer for 3-5 minutes. Sieve the flour, carob, baking powder and soda together and fold in the butter sugar mixture. Add some oil or milk if needed. Transfer to a greased cake pan and bake at 365F for 15-20 minutes or until tooth pick comes out clean. 

Similarly, bake an eggless basic cake. 
Place the carob cake in a cake board, apply frosting and then invert the basic cake on top of it and ice fully. Write the words 'May The Force Be With You' using the icing. Place Star Wars themed small toys on the cake.

Eggless Three Milk Cake / Eggless Tres Leches Cake

I have tasted the Three Milk cake many years ago and absolutely loved it. Here is the recipe from a recent try:

1. Make basic eggless sponge cake.
Recipe:
Flour : 2 cups
Sugar (Brown or White): 1 cup
Butter: 1 stick
Baking Powder: 1 tbsp
Baking Soda: 1 tsp
Vanilla or other flavour: Optional
Milk or oil: as needed

Cream the butter and sugar by beating on high for 3-5 minutes.
Sieve the flour, baking powder, baking soda together and fold into the wet mixture.
Mix well. Add milk or oil to bring this mixture to idli batter consistency.
Pour onto greased cake pans and bake at 365F until tooth pick comes out clean.

Transfer the cake to the tray you will use for the final cake.
Poke holes on the cake with a fork and set aside.

2. Prepare a three milk mixture:
1 can condensed milk
1 can evaporated milk
1/2 cup whole milk

Mix all of the above and whisk until completely mixed.

3. Now pour the milk mixture onto the cake that was set aside slowly and give it about 30 minutes for the cake to absorb the milk mixture.

4. Ice and decorate as you please. I used some whipped cream icing and stuck some cut strawberries on the sides.
